Goat's milk is nutritionally similar to cow's milk, and when kept fresh and cold, tastes just like whole cow's milk, but many people find it easier to digest and tolerate.
While cow's milk separates into a heavy cream line, the fat globules in goat's milk are much smaller in size, and the milk appears much more homogenized, and many find this to be more palatable.
