This take on coleslaw is a happy addition to any southwest plate. I use my knife to shred the cabbage and carrot, but is recipe was made for a food processor and it certainly speeds up the prep time. The cabbage and carrot are sweet and crunchy and the dressing is bright and spicy. This is a recipe that is infinitely customizable. Dress this fella’ up with cilantro, green onion, sweet red pepper or even parsley will add a spark. For those who need a milder version, just leave out the jalapeno and you’ll be
When serving use a slotted spoon so that any excess liquid can drain. This slaw is delicious with burritos, tacos, fajitas, black bean soup or on its own for a snack. If you use red cabbage, be warned, it will turn everything purple. To mitigate that a bit, toss the cabbage first with a tablespoon of olive oil.
