Olivier Verdier was born in Pézenas in the South of France. His first taste of the restaurant industry came at age 13, when he worked a summer job at L'Auberge de la Tour Valros. He followed this with four years of Restaurant, Business, and Cooking School, before taking a job at La Presqu'ile, a two Macaron Michelin Restaurant in Cassis. For the next ten years, Olivier worked summers at Les Chimeres and winters at Le Tremplin Courchevel.
Eager for new experiences, Olivier moved to the US in 2006, knowing barely a word of English. He began waitering at a French Bistro, and improved his English by reading Lee Child and James Patterson novels. Over the next several years, Olivier deepened his understanding of the New York City restaurant scene with positions at Keith McNally's Morandi and A Voce. He was ready to go after his dream.
Olivier has brought to life his vision for a laid-back French Bistro with Spanish and Italian influences. The menu reflects his South-of-France roots and diverse professional experiences.
