You are essentially walking in blind without knowing what you will teach that day or the needs of the children in your classroom.

I would always bring a copy of my Curriculum Vitae, Cover Letter, Statutory Declaration and Garda Vetting Disclosure. If you have a Teaching Council number, you can inform the school secretary so as to organise pay. If you do not have a Teaching Council number, you can give your Personal Public Service Number (PPSN) instead. However, note that the 5 day rule applies, meaning you must take every 6th working day off.

I bring a few essentials such as whiteboard markers, stickers, stamps, watch, pens, small notebook, post-its, hand bell and a whistle. If you drink tea/coffee most schools now require you to bring your own mug. I would recommend bringing a diary to keep track of subbing days. I would always keep sanitiser and masks stocked up too.
