This mixing originated from Turkish, Afghan, Persian and Arab traders who stopped in India. and left behind a distinctly spiced food culture in the 18th to 19th centuries. The arrival of Europeans increased the popularity of vegetables in India. The name itself comes from the Persian language which means fried or grilled. This name was given because at first, the process of cooking rice begins with frying it in ghee before boiling it with spices until it is half cooked.
