I whipped up an incredibly successful Mexican fried rice dish for breakfast this morning. Successful, as in delicious and it turned out how I imagined it would. I didn’t follow a recipe, but after reading through and making variations of the fried rice recipe in the Lucky Peach 101 Easy Asian Recipes cookbook , I have the general order of operations and necessary components down.
I (more or less) made the copycat Chipotle cilantro lime rice on Sunday, when I made Crock Pot carnitas (link NSFW for language, sorry; but the recipe was highly recommended and the result was perfect!). I used the juice of two whole limes from our tree because there are certain ingredients I am extremely generous with when cooking (garlic, ginger, basil, and tomatoes are others). I make some basic scrambled eggs in the pan, removed them to a bowl when done, and then dumped a can of corn niblets (from our emergency food stash) and a can of black beans, rinsed, into the pan with some butter. Once it was heated through, I added the rice in portions until it was broken up enough to mix well.
