We studiously sourced olive trees from orchards that grow in the rich soil at the base of Mount Etna in Sicily. These trees have an ancestral lineage that can be traced to the Greeks, who brought olive trees to Sicily over 2,000 years ago.
After many, many tastings in Italy, we chose three types of olive trees to create our Sicilian estate olive oil blend: grassy Nocellara, peppery Cerasuola, and the wonderfully buttery Biancolilla.
